Chicken Salad with Pineapple

 

This recipe can be made ahead in part.  One recipe is enough for 4 servings

 

Ingredients:

 

4 cups cooked chicken chopped

¾ cup macadamia nuts chopped

½ cup green bell pepper chopped

½ cup celery chopped

¼ cup green onion chopped

2 TBS fresh parsley (or 1TBS dry parsley)

 

Directions:

Combine the ingredients above.  This part can be stored in refrigerator for 24 hours.

 

Ingredients Continued:

1 ¼ cups mayonnaise

2 tsp curry

½ tsp seasoned salt

¼ tsp ground black pepper

Combine the ingredients above.  This part can be stored in refrigerator for 24 hours.

 

Just be for serving:

 

Cut one pineapple into 4 lengthwise sections, leaving the stem in place.  Scoop out the pineapple pulp, leaving the shells intact.

 

Chop 1 ½ cup of pineapple that has been scooped out.  Combine the chicken mixture, mayonnaise mixture and the pineapple.  Mound the chicken salad in your pineapple boats.

 

Serve immediately.  Don’t combine the pineapple part until just before you are ready to serve.  Acidic fruits react with meat.

 

This is a great recipe for a summer party, wedding shower or baby shower.
