Chinese New Years Egg Roll Salad

Ingredients:
1 bag of coleslaw mix with carrots
1 cup of leftover chicken, pork or beef, cooked
2 T soy sauce
1 T Teriyaki sauce
1 tsp onion powder
10 large egg roll wrappers cut into long strips
1 green onion
Sweet and sour sauce or duck sauce
4 T vegetable oil
Directions:
In a large frying pay heat oil. Slowly add egg roll wrappers and fry until crisp. Let drain on paper towel. Add coleslaw mixture to frying pay. Then add meat, soy sauce, teriyaki sauce and garlic powder. Stir until warmed through.
Depending on your setup, either let guests serve themselves and have the green onions and crispy wrappers on the side to add as their preference. Or put salad into bowls and top with green onions and wrappers and let them add their own sauce.
An alternative to making your own crispy wrappers is just to have some chow mein noodles - already crispy and easy to serve!
